Description

It might be best known for its earthy Russet potatoes, but Idaho isn’t just about spuds. In this Northwestern state cities give way readily to fields of potatoes, true, but beyond that there are acres of open wilderness punctuated by meandering rivers, remote lakes and untamed mountains. Understandably, sportsmen flock to these parts in search of wild game and lunker trout, but even the armchair enthusiast will have no trouble satiating a wild appetite.

So unfurl your napkin, arm yourself with the appropriate cutlery and treat yourself to a taste of Idaho. Warm up with wild morel mushrooms poached in fondu, followed by flakey trout, caught in a local river and grilled just right, or succulent American Kobe Beef, straight from an Idaho farm. Add to your menu lightly seasoned fries or a steaming baked potato made with Idaho’s own, the Russet, and a vegetable aside that ranges seasonally from asparagus to zucchini via chard, corn or green beans, then finish off with a scoop of ice cream crafted with wild huckleberries. Wash it all down with a glass of ice wine, made from frozen grapes by a winery in Sunnyslope before retiring your place at the feast.

For souvenirs of the fresh produce sort, look for farmers markets from late spring to early autumn.
